Local is everything to us.
When we are searching for our ingredients, we start with the Saanich Peninsula and then expand out to the rest of the Island. If we cannot find what we are looking for then we search the mainland. Some exceptions to this are hops, which we source from around BC, and some spices and botanicals. We like to meet with our ingredient suppliers before using their products to make sure we align on our values and commitment to quality.
Seasonality is at the core of our ciders
We prefer to use whole, fresh in-season fruit. Because the freshness and minimal processing leads to better, richer, fuller flavours. Ciders get released when they are ready and not a minute sooner. We've been known to spend three years crafting the perfect bottle.
